Since I got so much feedback on these oatmeal pancakes on instagram I’m sharing the (extremely easy) recipe with you!
These pancakes are healthy (if you don’t put sugar on or in it off course), are tasty and fill you up for the rest of the day. You can have them a breakfast or lunch, I wouldn’t advice dinner since oatmeal can be really heavy.
Ingredients for 1 portion:
– 1 egg
– milk or soy milk
I improvise when making them. Just put everything together and make sure it looks like the usual pancake dough so if necessary ad more milk or oatmeal. If you are wondering how I get from big flakes of oats to a these beautiful pancakes, use a blender (or a soup mixer also does the trick). Mixing it also makes it easier to bake the pancakes nicely.
Make small pancakes because big ones can fall apart.
Serve them with coconut sugar, fruit, yoghurt or whatever you like (and if you want you can add some cinnamon to the dough).
